The most traditional #mithai for #Holi is #Mawa #gujiya and this is something i used to relish during my child hood days. #Holi the #festival of colors is celebrated across #india and people play with colors and exchange #homemade #mithais and seek blessings of elders. This sweet was made in our house and my mother would stuff #khoya(Condensed milk) and #semolina #nuts and i would sometimes go to the kitchen and quietly pick up one and run away. I am sure we all have done this . Here is the recipe and time to relive the old memories.#homemade #holirecipe #festivalrecipe #mithaiMawa Ghujiya Ingredients QuantitySemolina 2tbspGhee 2tbsp+ 2tbspAlmonds chopped 1 tbspCashew nuts chopped 1tbspRaisins 1tbspKhoya 1 ½ cupCardamom powder 1tspDates 1tbspSaffron crushed ½ tsp+ ½ tspRefined flour 1cupWater as required+ as requiredSugar 1 ½ tbsp+ 1cupGhee for fryingSaffron syrup for drizzlingPistachio for garnishMethod1. First in pan add ghee, almonds, cashew nuts and sauté for a min, then add raisins and sauté gain.2. Now add semolina and sauté it, now switch off the gas and add Khoya in it and sauté it properly. We don’t have to melt the Khoya, remove in a bowl and keep aside.3. Now add cardamom powder, dates and saffron crushed and mix it properly. Add this everything when mixture is cool.4. Now take a bowl add refined flour, ghee, mix it properly, now add water and make a hard dough of it. Cover with a cloth and keep aside.5. Now In the Mawa add sugar and mix it properly. Meanwhile keep the ghee for heating6. Now take the dough and make small balls of it and roll it out in disc shape, take water in a bowl and keep aside.7. Now take the filling and keep in center and apply water on the edges of the disc and fold from one side and press it.8. Now fold the corners towards the stuffing, do same with the remaining Mawa and dough.9. Our ghee is ready to fry Ghujiya, fry till golden in colour.10. Now for sugar syrup take a pan and add sugar, water and boil till sugar melts, we have to make one string sugar syrup.11. When the syrup is ready add saffron in it and mix it properly.12. Now add the Ghujiya in syrup and coat it well, do same with rest of them.13. Our Ghujiya is ready with a shine.14. Now serve it in a plate and drizzle some saffron syrup on top of it.15.
