Often quinoa in the "health" or "natural foods" section will be over-priced, so definitely look around for the better deal--it's out there!Mediterranean Quinoa Recipe Ingredients :1 cup QUINOA2 cups SPINACH10-15 CHERRY TOMATOES (sliced in halves)3 cloves chopped GARLIC-1 cup FETA cheese cup fresh BASIL1 med chopped ONION 1 Tbsp OLIVE OIL for sauteing the onion1-2 Tbsp mild VINEGARSALT and PEPPER to taste1 tsp dried HERBS (thyme, basil, oregano, etc.)How to Make Mediterranean Quinoa :Bring 2 cups of salted water to a boil. Add 1 cup of quinoa (at this time also add any dried herbs). Cover and let simmer 15 minutes, until the water is absorbed. While the quinoa cooks, saute the onions and garlic. Once the quinoa is cooked, remove from the heat and--while the quinoa is still hot--stir in the spinach and basil until wilted, and add the onion and garlic. Let Quinoa cool about 10 minutes, and then stir in the cherry tomatoes, vinegar, feta cheese, and extra salt and pepper as desired.
