METHI DANA SABZI

Ingredient

¼ cup fenugreek seed (methi dana), soaked overnight
1 tbsp mustard oil
½ tsp cumin seeds
½ tsp fennel seeds
A pinch of asafoetida (hing)
Salt to taste
¼ teaspoon turmeric powder
½ teaspoon red chili powder
½ teaspoon coriander powder
6-7 raisins
4-5 almond, roughly chopped + for garnish
5-6 cashew nut, roughly chopped + for garnish
¼ teaspoon dried mango powder
½ teaspoon honey

Method

1. Heat mustard oil in a deep non-stick pan, add cumin seeds, fennel seeds and sauté till it crackles. Add asafoetida and fenugreek seeds.
2. Add salt, turmeric powder, red chilli powder, coriander powder and sauté for a minute. Cover and cook for 3-4 minutes.
3. Add raisin, almond, cashew nut, dried mango powder, honey and sauté for 1-2 minutes on medium heat.
4. Serve hot and garnish with almond and cashew nut.
