methi puri recipe kadak puri methi poori crispy Indian Jar Snack by Tarla Dalal

Ingredients

For Methi Puri

1 cup whole wheat flour (gehun ka atta)
1/2 cup finely chopped fenugreek (methi)
1/4 tsp turmeric powder (haldi)
1/2 tsp chilli powder
1/4 tsp asafoetida (hing)
salt to taste
2 tsp oil
oil for deep-frying

Method
For methi puri
1. To make methi puri, combine all the ingredients in a deep bowl and knead into a stiff dough using approx 6 tbsp of water.
2. Divide the dough into 35 equal portions.
3. Roll each portion into a circle of about 75 mm. (3") diameter and prick them using a fork at regular intervals.
4. Repeat steps to make remaining 34 puris.
5. Heat the oil in a deep non-stick kadhai and deep-fry, a few puris at a time, on a medium flame till they are crisp and turns golden brown in colour from both the sides. Drain on an absorbent paper.
6. Serve or store the methi puri in an air-tight container and use as required.
