Love Mexican flavours? Make this interesting starter using red kidney beans, salsa, olives and topped with crushed corn chips! MEXICAN MASTIIngredients½ cup red kidney beans (rajma), soaked, boiled and mashed1 tbsp + 2 tsps sweet chilli sauce¾ cup salsa (made of chopped onions, tomatoes and fresh coriander leaves)2 tsps tomato ketchupJuice of ½ lemon10-12 corn chips½ cup hung yogurt12 pitted black olivesA few fresh coriander leaves, to garnishMethod1. Put the mashed rajma in a non-stick pan, add ½ cup water and mix well and heat. Add 1 tbsp sweet chilli sauce and mix well. Let the mixture get heated through.2. Put 3 tbsps salsa in a bowl, add 2 tsps sweet chilli sauce, 2 tsps tomato ketchup and lemon juice and mix well.3. Crush corn chips and keep in another bowl.4. Take 5 fancy glasses, put 2 tbsps kidney beans mixture in each of them.5. Take hung yogurt in a bowl and whisk. 6. Halve black olives and put one in each glass. Put 1 tbsp hung yogurt over it. Top with 2 tbsps salsa.7. Keep a spoon in each glass. Put some crushed chips in each glass. Put remaining black olives on top.
