Mexican Shrimp Cocktail

Mexican shrimp cocktail is filled with fresh vegetables, a homemade tangy tomato sauce, and perfectly cooked shrimp! This is the ultimate poolside treat.

Ingredients

1 pound shrimp cooked, peeled, and deveined
2 roma tomatoes diced
1 English cucumber chopped into 1/4" size cubes
1/2 cup celery chopped
1/4 cup diced red onion
1/4 cup chopped cilantro
1 large avocado diced when ready to serve
1/2-1 jalapeno finely diced
2 cloves garlic finely minced
2 cups tomato juice
1/2 cup ketchup
1/4 cup lime juice about 2 limes worth
2 tablespoons hot sauce give or take to your liking
1 tablespoon prepared horseradish
1 teaspoon black pepper
1 teaspoon salt

Instructions

1 Cook shrimp if needed and place in a large mixing bowl.

2 Chop tomatoes, cucumber, celery, onion, cilantro and jalapeo. Add into the bowl with the shrimp, Add in finely minced garlic.

3 In a separate mixing bowl, make the juice by adding in tomato juice, ketchup, lime juice, hot sauce, prepared horseradish, pepper and salt. Stir until well combined.

4 Pour the sauce mixture over the shrimp and vegetables. Ladle into a fancy cup and enjoy!
