Super squishy passionfruit & yogurt sponge filled with a smooth passion fruit curd, topped with the silkiest milk chocolate swiss meringue buttercream and finished with a dollop of curd & the tangiest milk choc & passionfruit disc! Get ready, this recipe makes 12 cupcakes!

160g self raising flour
tsp bicarb130g caster sugar
Pinch of sea salt
50g passion fruit pure
140g plain yoghurt
2 eggs85g sunflower oil
tsp vanilla extract

PASSION FRUIT CURD
50g unsalted butter
Zest of lemon
65g caster sugar
65g passion fruit pure
1 egg3 egg yolks

CHOCOLATE AND PASSION FRUIT DISCS
100g milk chocolate
1 tbsp freeze-dried passion fruit chunks

MILK CHOC SWISS MERINGUE BUTTERCREAM
150g egg whites
tsp sea salt300g caster sugar
tsp vanilla extract
360g unsalted butter
300g milk chocolate
