Bite sized Kulchas stuffed with finely chopped mushrooms and flavourful spices are perfectly baked for you to enjoy!

MINI KUMBH KULCHA

Ingredients

Stuffing
15-20 button mushrooms, chopped
15-20 Shimeji mushrooms, chopped
2 tbsps oil
2 green chillies, finely chopped
2 medium onions, finely chopped
Salt to taste
1 tsp red chilli powder
½ tsp garam masala powder
1 tsp chaat masala
2 tbsps chopped fresh coriander
¼ cup grated cheddar cheese
¼ cup grated mozzarella cheese
Dough
1½ cups refined flour
½ tsp baking powder
½ tsp sugar
Salt to taste
2½ tbsps butter + for basting
½ cup milk
Oil for greasing

Method

1. Preheat the oven to 180˚C. Grease the baking tray with some oil.
2. For the dough, add mix together refined flour, baking powder, salt, sugar, butter and milk to make a soft dough. Cover and set aside for 15-20 minutes.
3. For the filling, heat oil in a non-stick pan. Add green chillies and sauté for a few seconds.
4. Add onions and sauté till translucent.
5. Add button mushrooms, Shimeji mushrooms, salt and mix well. Cook on medium heat till the mixture is dry.
6. Add red chilli powder, garam masala powder, chaat masala, coriander leaves and mix well.
7. Turn off the heat and add the cheddar cheese, mozzarella cheese and mix well. Set aside to cool down.
8. Divide the dough into small portions and shape each portion like a katori.
9. Stuff with the prepared mushroom stuffing and bring the edges together to seal it. Press lightly and transfer them on to the greased baking tray.
10. Apply melted butter on the prepared kulchas and place in the oven.
11. Bake for 15-20 minutes. Serve hot.
