Mini Prawn Burger | Sanjeev Kapoor Khazana

Shallow fried prawn patty slides between mini burger buns and served in style.

MINI PRAWN BURGER

Ingredient

20-25 medium prawns
4 mini burger buns
1medium onion, grated
2 medium potatoes, boiled, peeled and grated
2 tbsps chopped parsley
Salt to taste
Crushed black peppercorns to taste
1 egg, seperated
1 lemon
½ cup breadcrumbs + for coating
Oil for shallow frying
4 tbsps butter
4 tbsps tartare sauce
1 small onion, cut into roundels and separated
1 small tomato, sliced
Micro greens as required
2 cherry tomatoes, cut into halves.

Method

1. In a blender take prawns and blend to a coarse mixture.
2. Take prawns in a bowl. Add grated onion, potatoes, parsley, salt, pepper and egg yolk. Grate the zest of a lemon and add breadcrumbs, mix well.
3. Divide the mixture in equal portions and shape into a patty.
4. Dip the patty in egg white and then coat it with breadcrumbs.
5. Heat oil in a non-stick pan and shallow fry the patty till golden brown on both sides. Keep aside.
6. Cut the burger buns into half.
7. In the same pan heat butter and lightly toast the buns.
8. Apply tartare sauce on the base of the buns. Place a patty over it. Add a few onion rings, slice of tomato, ½ tablespoon of tartare sauce and crushed pepper on top. Add a few micro greens on top. Cover the burger and secure it with half of a cherry tomato on a toothpick.
9. Serve immediately.
