4 x 10 Minute Family Meals

Do you struggle to get a delicious and nutritious meal on the during the week? I'm sharing 4 quick, easy and tasty family meal ideas, all which only take 10 minutes to prepare and cook!

1. Cheat's Paella

frozen onions (equivalent of 1 medium onion)
frozen garlic (equivalent of 2 cloves)
frozen peppers (equivalent of 2 peppers)
75g chorizo, chopped
100g cooked chicken, chopped
1 tsp smoked paprika
2 packs microwave vegetable rice
50ml water

2. Creamy Chickpea Curry

0.5 tbsp oil
frozen onions (the equivalent of 1 medium onion)
frozen garlic (the equivalent of 1 garlic clove)
1 tsp frozen ginger
3 tbsp curry paste
2 tins chickpeas, drained
1 tin chopped tomatoes
1 tin coconut milk
rice and coriander to serve

3. Spinach & Parmesan Orzo

400g orzo
frozen garlic (equivalent of 2 cloves)
1 litre hot vegetable stock
100g grated parmesan
100g fresh baby spinach

4. Veggie Bean Chilli

0.5 tbsp oil
frozen onions (the equivalent of 1 medium onion)
frozen garlic (the equivalent of 1 garlic clove)
1 tsp ground cumin
1 tsp smoked paprika
2 tsp chipotle chilli paste
1 tin tomatoes
1 tin black beans, drained
1 tin kidney beans, drained
100g frozen peas and corn
To serve: tortilla chips, sour cream, grated cheese, coriander, lime
