You can never go wrong with this crunchy and creamy mixed vegetable and mayo wrap. A great way to get your veggie fix.

MIXED VEGETABLE AND MAYO WRAP

Ingredients

4 whole wheat flour rotis
1 cup broccoli florets, blanched
½ medium carrot, cut into thin strips
½ medium green capsicum, cut into strips
½ medium red capsicum, cut into strips
½ medium yellow capsicum, cut into strips
½ cup shredded iceberg lettuce leaves
Salt to taste
⅓ cup mayonnaise
1½ tablespoons red chilli sauce
Potato wedges for serving

Method

1. To prepare stuffing, mix together broccoli, carrot, green capsicum, red capsicum, yellow capsicum, salt, mayonnaise, chilli sauce and lettuce leaves in a bowl.
2. Put some stuffing in the center of each roti and roll them.
3. Wrap them in aluminium foil and serve immediately with potato wedges.
