Mixed Vegetable Parantha | Family Food Tales with Mrs Alyona Kapoor | Sanjeev Kapoor Khazana

A traditional Punjabi dish, this Mixed Vegetable Paratha is a wholesome and homely dish, full of flavour and taste.

MIXED VEGETABLE PARANTHA

Ingredients

1 small carrot, grated
3-4 spinach leaves, shredded
¼ medium bottle gourd (dodhi), grated
1 medium potato, boiled and peeled
½ cup soya flour
1 cup whole wheat flour (atta) + for coating and dusting
2 teaspoons ginger-green chilli paste
Salt to taste
1 teaspoon chaat masala
½ teaspoon carom (ajwain)seeds
3 teaspoons oil
Ghee for basting
Yogurt for serving
Pickle for serving

Method

1. Mix together soya flour, 1 cup wheat flour, carrot, spinach, bottle gourd, ginger-green chilli paste, salt, chaat masala and carom seeds in a bowl.
2. Add 2 teaspoons oil. Mash the potato and add to the mixture and knead into a dough. Add remaining oil and knead into a semi-soft dough. Set aside for 5-10 minutes.
3. Heat a non-stick tawa.
4. Divide the dough into equal portions, shape into balls and flatten them slightly between your palms.
5. Coat each portion with some wheat flour and roll out into semi-thick discs, dusting with some wheat flour.
6. Place each disc on hot tawa and roast from both sides till golden brown, basting with some ghee.
7. Serve hot with yogurt and your choice of pickle.
