A quick and simple mixed vegetable recipe that goes well for lunch as well as dinner. MIXED VEGETABLEIngredients6-8 button mushrooms cut into small pieces10-15 cauliflower florets, blanched1 medium carrots, peeled, cut into ½ inch pieces and blanched8-10 French beans, cut into ½ inch pieces and blanched½ cup green peas, blanched3 tbsps oil1 tsp cumin seeds2 medium onion, finely chopped1 large tomato, finely choppedSalt to taste1 tsp red chilli powder½ tsp turmeric powder1 tbsps coriander powder½ tsp dried fenugreek powder1½ tbsps kaju-magaz paste¼ tsp garam masala powder1 tsp dried fenugreek leavesSprig of coriander for garnishMethod1. Heat oil in a non-stick pan, addcumin seeds and let the colour change. Add onion andsauté till golden brown.2. Add tomato, and salt, mix well. Cover and cook till the tomato is pulpy.3. Add red chilli powder, turmeric powder, coriander powder, dried fenugreek powder, mix well and cook for 1 minute.4. Add kaju-magaz paste and mix well. Add 1 cup water and mix well. Add mushrooms, mix well. Cover and cook for 2 minutes.5. Add cauliflower, carrots, French beans, and green peas Mix well and add ½ cup water. Mix well and cook for 2 minutes.6. Add garam masala powder, crush dried fenugreek leaves and add to the cooked mixture, mix well.7.
