When your cupcakes are infused with coffee flavour, it's like a dream come true.MOCHA CUPCAKES Ingredients 2 tablespoons instant coffee powder1 tablespoon coffee decoction 1 cup refined flour (maida)½ cup castor sugar 2 tablespoons cocoa powder ½ teaspoon baking soda ½ cup melted butter ½ teaspoon vanilla essence ½ teaspoon vinegar Icing sugar for dusting Method 1. Preheat oven to 180º C.2. Mix together flour, sugar, cocoa powder, baking soda and coffee powder in a bowl. 3. Add butter, vanilla essence, vinegar and coffee decoction and mix well. 4. Add ¼ cup water and mix. Add another ¼ cup water and beat with a hand blender to a smooth and lump-free batter. 5. Line a cupcake mould with paper liners and spoon in the batter till ¾ full. Gently tap the mould, keep the mould in the preheated oven and bake for 12-15 minutes. Remove from heat, cool and demould. 6. Dust icing sugar and serve.
