Ingredient's Quantity
Curd 2 cup
Sugar powder 3 tbsp
Rose water 1 tsp
Soaked tamarind cup
Jaggery cup
Red chilli powder 1 tsp
Black pepper powder 1 tsp
Carom seed 1 tsp
Cumin tsp + 1 tbsp
Dry ginger powder tsp
Fennel powder tsp
Kala namak 1 tsp
Asafoetida tsp+ tsp
Salt to taste
Coriander leaves 1 cup
Mint leaves cup
Ginger 1 inch
Green chillies 3 no
Water as required
Salt to taste
Lemon juice 1 no
Chaat masala tsp
Kala namak tsp
Red chilli powder tsp
Dates 3-4 pieces + 3-4 no
Water as required + water as required
Kala namak 1 tsp
Butter buttons 10-12 pieces
For garnish
Red chilli powder
Cumin powder
Chaat masala
Sliced dates
Method
In a bowl take curd add sugar , rose water and whisk it well . once its done keep it aside
In a kadhai add soaked tamarind , jaggery, red chilli powder , black pepper powder , cumin , ginger powder , fennel powder , kala namak . asafoetida, salt and let it cook well now add dates to it and mix it well and set aside .
Strain the tamarind chutney and keep it aside
Till then in a mixer grinder add coriander , mint , green chillies , ginger , water as required and grind it well , now add ice n grind it well again now add salt , lemon juice , red chilli powder , chaat masala ,
Kala namak ,and remove it in a bowl and keep it aside
In a same kadhai add water kala namak , asafoetida and let it get boil,
Till then in a pan roast some cumin seeds and remove it in a masala grinder and grind it well and keep it aside , chop some dates and keep it aside
now add butter buttons in the boiling water and remove it in a bowl and now add normal temperature water and soak it for 2-3 mins
in a serving plate add some curd and spread it well , take a soaked butter buttons and squeeze it with yr palms and place it on the curd , top it up with some more amount of curd ,tamarind chutney , green chutney and with the help of a tooth pick make a design , now add red chilli powder , cumin powder , chaat masala ,chopped dates and serve it
