MOJITO Ingredients240ml white rum1 cup fresh mint leaves2 lemons, cut into wedges½ cup sugar4 dashes of lemon juiceCrushed ice as required Soda as requiredMethod1. To make syrup, heat sugar and ½ cup water in a non-stick pan till the sugar melts. Take the pan off the heat and allow the syrup to cool completely.2. To make one portion, put 12-15 mint leaves in a serving glass, add a few lemon wedges, muddle with a muddler. 3. Add 25ml of sugar syrup, a dash of lemon juice, 60ml white rum, add crushed ice, and top up with soda. Serve immediately.
