MOONG AND PALAK HANDVO (Jain)

Ingredients

1¾ cups Tata Sampann Moong Dal Chilka
½ medium bunch spinach, blanched
2 tbsps oats flour
¼ cup boiled sweet corn
¼ cup boiled green peas
12-15 spinach leaves, shredded
Salt to taste
¼ tsp turmeric powder
1 tsp red chilli powder
½ tsp coriander-cumin powder
½ tsp garam masala powder
1 tbsp lemon juice
2 tsps sugar
2-3 green chillies, crushed
2 tsps fruit salt
4 tsps oil
2 tsps mustard seeds
4 tsps white sesame seeds
Tomato ketchup to serve

Method

1. Take Tata Sampann Moong Dal Chilka in a bowl and add sufficient water. Soak for 2-3 hours.
2. In a blender jar, drain and add the soaked moong dal, spinach and oats flour. Add a little water and blend to a coarse mixture. Transfer the mixture into a large bowl.
3. In the same bowl, add sweet corn, green peas, spinach leaves, salt, turmeric powder, red chilli powder, coriander-cumin powder, garam masala powder, lemon juice, sugar and green chillies. Mix well.
4. Add a little water and mix till well combined. Set aside.
5. Heat a non-stick shallow pan, meanwhile, add fruit salt into the prepared mixture and mix well.
6. For one portion, heat 1 tsp oil into the hot pan, add ½ tsp mustard seeds and let them splutter. Add 1 tsp sesame seeds and lightly toast them,
7. Pour a ladle of the prepared batter and spread it lightly. Cover and cook on low heat till the base becomes crispy.
8. Flip the handvo, cover and cook till the other side becomes crispy.
9. Serve hot with tomato ketchup.
