Learn how to make the yummy Moong and Palak Handvo in Gujarati.MOONG AND PALAK HANDVO (Jain)Ingredients1¾ cups Tata Sampann Moong Dal Chilka ½ medium bunch spinach, blanched2 tbsps oats flour¼ cup boiled sweet corn¼ cup boiled green peas12-15 spinach leaves, shreddedSalt to taste¼ tsp turmeric powder1 tsp red chilli powder½ tsp coriander-cumin powder½ tsp garam masala powder1 tbsp lemon juice2 tsps sugar2-3 green chillies, crushed2 tsps fruit salt4 tsps oil2 tsps mustard seeds4 tsps white sesame seedsTomato ketchup to serveMethod1. Take Tata Sampann Moong Dal Chilka in a bowl and add sufficient water. Soak for 2-3 hours. 2. In a blender jar, drain and add the soaked moong dal, spinach and oats flour. Add a little water and blend to a coarse mixture. Transfer the mixture into a large bowl.3. In the same bowl, add sweet corn, green peas, spinach leaves, salt, turmeric powder, red chilli powder, coriander-cumin powder, garam masala powder, lemon juice, sugar and green chillies. Mix well.4. Add a little water and mix till well combined. Set aside.5. Heat a non-stick shallow pan, meanwhile, add fruit salt into the prepared mixture and mix well.6. For one portion, heat 1 tsp oil into the hot pan, add ½ tsp mustard seeds and let them splutter. Add 1 tsp sesame seeds and lightly toast them,7. Pour a ladle of the prepared batter and spread it lightly. Cover and cook on low heat till the base becomes crispy. 8. Flip the handvo, cover and cook till the other side becomes crispy.9.
