MORINGA DAL FRY

Ingredients

2 cups fresh moringa leaves (singh ke patte)
1½ cups cooked split pigeon peas (toor dal)
1 medium onion
2 tbsps oil
1 bay leaf
2-3 green chillies, chopped
1 tbsp crushed garlic
½ tbsp crushed ginger
1 medium tomato, finely chopped
Salt to taste
½ tsp turmeric powder
1 tsp red chilli powder
1 tsp coriander powder
½ tsp cumin powder
1 tsp sugar
½ tsp garam masala powder
Tempering
1 tbsp ghee
1 tsp cumin seeds
1-2 dried red chillies
2-3 garlic cloves, sliced
To serve
Steamed rice as required

Method

1. Roughly chop moringa leaves and transfer it into a bowl.
2. Finely chop onion.
3. Heat oil in a non-stick pan. Add bay leaf, chopped onion, and green chillies and sauté till the onion turns translucent.
4. Add garlic and ginger and sauté for 2-3 minutes.
5. Add tomato and salt, mix and cook for 1-2 minutes.
6. Add ¼ cup water, mix, cover and cook for 3-4 minutes.
7. Add turmeric powder, red chilli powder, coriander powder, cumin powder and sugar and sauté for 1-2 minutes.
8. Add moringa leaves, mix and cook for 2-3 minutes. Add cooked pigeon peas, mix and cook for a minute.
9. Add 1 cup water and adjust salt, mix and cook till the mixture comes to a boil.
10. Sprinkle garam masala powder, mix and cook for a minute. Take the pan off the heat.
11. For the tempering, heat ghee in a small non-stick pan, add cumin seeds and let them change colour.
12. Add dried red chillies and garlic cloves and sauté for 1 minute. Pour this over the dal and serve hot with steamed rice.
