MORINGA DAL FRYIngredients2 cups fresh moringa leaves (singh ke patte)1½ cups cooked split pigeon peas (toor dal) 1 medium onion2 tbsps oil1 bay leaf2-3 green chillies, chopped1 tbsp crushed garlic½ tbsp crushed ginger1 medium tomato, finely choppedSalt to taste½ tsp turmeric powder1 tsp red chilli powder1 tsp coriander powder½ tsp cumin powder1 tsp sugar½ tsp garam masala powderTempering1 tbsp ghee1 tsp cumin seeds1-2 dried red chillies2-3 garlic cloves, slicedTo serveSteamed rice as requiredMethod1. Roughly chop moringa leaves and transfer it into a bowl.2. Finely chop onion.3. Heat oil in a non-stick pan. Add bay leaf, chopped onion, and green chillies and sauté till the onion turns translucent.4. Add garlic and ginger and sauté for 2-3 minutes.5. Add tomato and salt, mix and cook for 1-2 minutes.6. Add ¼ cup water, mix, cover and cook for 3-4 minutes.7. Add turmeric powder, red chilli powder, coriander powder, cumin powder and sugar and sauté for 1-2 minutes.8. Add moringa leaves, mix and cook for 2-3 minutes. Add cooked pigeon peas, mix and cook for a minute.9. Add 1 cup water and adjust salt, mix and cook till the mixture comes to a boil.10. Sprinkle garam masala powder, mix and cook for a minute. Take the pan off the heat.11. For the tempering, heat ghee in a small non-stick pan, add cumin seeds and let them change colour.12. Add dried red chillies and garlic cloves and sauté for 1 minute. Pour this over the dal and serve hot with steamed rice.
