Cooked chicken pieces stuffed with mozzarella and spinach topped with marinara sauce.MOZZARELLA CHICKEN WITH MARINARA SAUCEIngredients 200 grams boneless chicken breasts2-4 cheese slices¼ cup marinara sauceFresh spinach leaves as required 2 tablespoons olive oil1 teaspoon dried mixed herbsSalt to tasteCrushed black peppercorns to taste ½ teaspoon red chilli flakesCarrot strips for garnishingMethod1. Slit a chicken breast horizontally. Cover it with butter paper and flatten it out using a rolling pin. Discard the butter paper. 2. Place 5-6 spinach leaves and cheese slices over the flattened chicken breast, roll tightly in a cling wrap and refrigerate for 2 hours. 3. Boil sufficient water in a non-stick pan. Add cling wrapped chicken and cook for 10-15 minutes. Remove from heat, discard the cling wrap and set aside. 4. Heat olive oil in a non-stick pan. Add marinara sauce, mixed herbs, salt, crushed peppercorns and chilli flakes, mix well and cook for a few seconds. Remove from heat and set aside. 5. Cut the chicken into slices and transfer to a serving platter. Top with the prepared sauce. 6. Garnish with carrot strips and serve immediately.
