A classic recipe from the Gujarati cuisine, this moong curry has a punch of health and flavour.

MUG NU GUGRI

Ingredients

½ cup wheat, soaked and pressure cooked
1 cup Tata Sampann Green Moong
1 tbsp oil
1 tsp mustard seeds
½ tsp asafoetida (hing)
½ tsp turmeric powder
1½ tsps red chilli powder
Salt to taste
1 tsp coriander-cumin powder

Method

1. In a large bowl, add Tata Sampann Green Moong and sufficient water. Wash it 2-3 times and pressure cook it till 2-3 whistles are released. Allow the pressure to be released completely.
2. Heat oil in a non-stick pan, add mustard seeds and let them splutter. Add asafoetida and ¼ tsp turmeric powder, 1 tsp red chilli powder and 2 cups water. Mix well.
3. Add salt, coriander-cumin powder, remaining turmeric powder, remaining red chilli powder.
4. Add cooked wheat and add the cooked moong. Mix well, cover and cook for 5-10 minutes. Take it off the heat and transfer into a serving bowl.
5. Serve hot.
