This healthy cookie mix recipe made out of finger millet flour is the sweetest nutritional snack you can find.

MULTIGRAIN COOKIES

Ingredients

2½ cups finger millet (ragi)flour
1¼ cups crushed whole oats
1¼ cups refined flour
5 tbsps pumpkin seeds
5 tbsps sunflower seeds
5 tbsps melon seeds
1¼ cups brown sugar
½ cup castor sugar
1½ tsps baking powder
1 tsp cinnamon powder
½ tsp nutmeg powder
1 tbsp chopped raisins
Cookies
¼ cup butter

Method

1. In a large bowl, sieve finger millet flour, refined flour and baking powder. Add brown sugar, castor sugar, pumpkin seeds, sunflower seeds, melon seeds, cinnamon powder, nutmeg powder and raisins and oats and mix well. Store in an air tight container for up to 21 days.
2. Preheat the oven at 180ºC.
3. Take 1 cup of the premix and add butter and mix well. Add water to form a dough. Take a portion of the mixture and place it on a baking tray lined with parchment sheet. Bake for 15-20 minutes.
4. Serve.
