Multigrain khichdi

Ingredients Quantity

Bajra soaked 2 tbsp
Jowar soaked 2 tbsp
Rice soaked 1 cup
Broken wheat soaked 4 tbsp
Sprouts 1 cup
Sweet corn ½ cup
Hot water as required + 3 cup
Turmeric powder 1 tsp + 1 tsp
Bay leaf 2 nos
Salt to taste + to taste
Red pumpkin 100 gm
Ghee 3 tbsp
LG Hing a pinch
Cumin seed 1 tsp
Ginger chopped 1 ½ tbsp
Green chilli 4 nos
Onion chopped 2 nos
Tomatoes chopped 3 nos
Black pepper 1 tsp
Drum sticks 2 nos
Spinach 1 bunch
Garam masala 1 tsp
Roasted peanuts 2 -3 tbsp
Coriander leaves 2 tbsp
Mint sprig for garnish

Method :
1. In a blender , add bajra , jowar and coarsely grind it , keep it aside .
2. Heat a pressure cooker , add rice , broken wheat , sprouted moong , sweet corn , add hot water into the blender tilt and pour the mixture in pressure cooker .
3. Now add water , turmeric powder , bay leaf , salt , close the lid , allow it to cook until 6-8 whistle on medium flame .
4. Meanwhile , take red pumpkin , cut it into small cubes , keep it aside
5. Now open the lid , after desired whistles , give a nice stir , keep it aside .
6. Heat a kadhai , add ghee , LG Hing , cumin seed , ginger chopped , green chilli chopped ,sauté it for 30 seconds .
7. Now add onions , give a stir and sauté it well for 3-4 mins on low flame .
8. Now add tomatoes mix it well , add salt , black pepper , red pumpkin , drum stick , turmeric powder , mix it well , close the lid allow it to cook for 4-5 mins .
9. Meanwhile take the spinach and chop it roughly , keep it aside .
10. Once drumstick , red pumpkin is cooked 70% , add the kichdi , water , garam masala , spinach leaves , mix it well , using hand churner mash it thoroughly .
11. Now add peanuts ,coriander leaves , mix it well .
12. Transfer it to serving bowl , garnish with mint sprig .
13. Serve hot .
