Multigrain Makhane ke Ladoo Chef Harpal Singh

Ingredients Quantity
Clarified butter (Ghee) 1 tbsp + 3 tbsp + 2 tbsp
Fox nuts (makhane) 1 cup
Raisins (khismish) 2 tbsp
Walnuts 2 tbsp
Kaju 2 tbsp
Pistachio 2 tbsp
Wheat flour cup
Ragi flour cup
Jowar flour cup
Bajra flour cup
Jaggery 1 cup
Green cardamom powder 1 tsp
Ginger powder 1 tsp
Nutmeg powder tsp
Cinnamon powder tsp
Saffron 1 tsp

Method
For bhunai
Heat ghee in a kadai on medium flame. Add makhane and saut it. Keep aside in a bowl.
Add khismish, ghee and saut a bit. Add walnuts, kaju, pistachio and saut all nuts properly. Transfer the sauted nuts into a bowl and keep aside.
For Atta bhunai
Heat ghee in same kadai on medium flame. Add jowar flour bajra flour, ragi flour, wheat flour and saut it.
Add more ghee if required and saut till flour get grainy.
Add jaggery and saut till it melts.
Add the flour mixture to the bowl of roasted nuts and mix well.
Add cardamom powder, ginger powder, cinnamon powder, and nutmeg powder.
Grind the makhana and add it to the mixture.
Add saffron and mix thoroughly.
Take small portions of the mixture and start shaping each into a ball/laddu.
Arrange the laddoos on a serving plate and serve.
