Multigran Methi Mathri Chef Harpal Singh

Multigrain Methi Mathri is a popular Indian snack that is typically a crispy and flaky deep-fried biscuit or cracker. Methi refers to fenugreek leaves, and multigrain suggests the use of multiple grains floor in the preparation.

Ingredients Quantity
Ragi flour cup
Sorghum flour (Jowar) cup
Wheat flour cup
Gram flour (Besan) cup
Kasuri methi 1 tsp
Red Chilli powder tsp
Turmeric powder (Optional) tsp
Nigella seeds (Kalonji) tsp
Carom seeds (Ajwain) tsp
Cumin seeds tsp
Black pepper crushed 1 tsp
Black salt tsp
Asafoetida tsp
Clarified butter 2 tbsp
Salt to taste
Chaat masala 1 tsp
Water as required
Oil for frying
Red Chilli powder for sprinkle
Chaat masala for sprinkle

Method
In a large bowl add ragi flour, jowar flour, besan, wheat flour, kasuri methi, red Chilli powder, turmeric powder, kalonji, carom seed, cumin seed, black pepper crushed, black salt, Asafoetida, salt and ghee.
Mix it with hand till the mixture becomes grainy. Once ghee combined into mixture completely, the mixture will start holding together.
Add water and mix to make dough.
Take some dough and make a small and thin round shape of roti. Take a small size cutter and cut out mathri.
Heat oil on medium flame and fry it. When the mathri is floating in the oil, then the mathri is ready, take it out on tissue paper.
Sprinkle red Chilli powder and chaat masala on mathris and mix well. Serve crispy and spicy methi mathris as snack.
