Bay leaf, - 5-6 nos
Dry red chilli, - 25 gm (18-20nos)
Coriander seeds, - 35 gms
Cumin seeds, - 15 gms
Mustard seeds, - 5 gms
Nutmeg, - 1 no
Mace, - 2 gms
Cinnamon stick, - 8 gms
Black cardamom seeds, - 8 gms
Cloves, - 15 nos
Black peppercorn, - 8 gms
Star anise, - 2 no
Fennel seeds, - 15 gms
Turmeric powder, - 5 gm
Green cardamom, - 5 nos
Dry ginger powder, - 8 gms
Dry mango powder, - 15 gms
Asafoetida, - 1 tsp
Kasoori methi whole, dried, - 3 tbsp

Ingredients
For Bhaji (pressure cook)
Cauliflower, florets () - 1 cups
Carrot, sliced () - cup
Beetroot, diced () - cup
Capsicum, roughly cut ( ) - cup
Ginger, sliced () - 4-5 nos
Garlic cloves () - 4 nos
Green chilli ( ) - 1 no
Potato, diced () - 2 cups/ 250 gms
Oil () - 1 tbsp
Butter () - 3 tbsp
Salt () - to taste
Pav bhaji masala ( ) - 1 tbsp
Green peas ( ) - cup
Water () - 3 cups

For Bhaji Masala
Butter () - 3 tbsp
Oil () - 1 tbsp
Onion, chopped () - 1 cup
Ginger Garlic paste ( ) - tbsp
Turmeric () - tsp
Kashmiri chilli powder ( ) - 1 tbsp
Green chilli, chopped ( ) - 1 no
Pav bhaji masala ( ) - 2 tbsp
Salt () - to taste
Tomato, chopped () - 1 cups
Tomato puree ( ) - cup
Capsicum, chopped ( ) - 2 tbsp
Salt () - to taste
Kasoori methi ( ) - tsp
Coriander chopped ( ) - handful
Water () - as required
Salt () - to taste
Coriander chopped ( ) - handful
Chaat Masala ( ) - 1 tsp
Butter () - 1 tbsp
Green chilli, chopped ( ) - no

For Masala Pav
Butter () - 1 tbsp
Pav bhaji masala ( ) - tsp
Coriander chopped ( ) - handful
Bhaji () - 3-4 tbsp
Pav () - 6 nos

For Garnish
Onion, chopped () - handful
Lemon wedge () - few
