Happy watching. :)#PavBhaji #StreetFood #ChefRanveerPav BhajiPreparation Time: 15 minutesCooking Time: 35 minutesServes: 4IngredientsTo boil vegetables200 gms Cauliflower florets1 cup Carrot, Peeled, cubes1 capsicum, chopped1 cup Green PeasSalt to tasteFor Bhaji1 tbsp Oil100 gms Butter (add gradually)1 tsp Cumin Seeds1 tbsp Ginger Garlic paste2 Medium Onions, finely chopped4 Large Tomatoes, finely chopped3 Medium Potatoes, boiled & peeled1 tbsp Kashmiri Red Chili powder1 tsp Turmeric Powder3 tbsp Pav Bhaji MasalaSalt to taste1 no lime juice3 tbsp Fresh Coriander, choppedFor Pav2 tbsp Butter½ tsp Pav Bhaji Masala6-8 PavsFor Serving1 Large Onion, finely chopped1 Lemon, cut into quarters1 tbsp ButterProcessFor Boiled Vegetables●Add cauliflower, carrots, green peas and capsicum in pressure cooker. Now add water just to coverthe vegetables. ●Give 5 whistles. ●Make sure vegetables gets mushy & porridge kind of texture. ●Add cooked potatoes and mash well.For Bhaji● On a large tawa or kadhai heat oil and butter on medium flame.● Add onions and saute for a minute.● Add ginger garlic paste and saute till onion is golden in colour.● Add in tomatoes and cook for 3-4 mins while stirring continuously.● Add little amount of butter, mix well and cook for 3-4 minutes.● Add potatoes and mash them along with boiled vegetables using a potato masher.● Add kashmiri red chilli to the bhaji and mix well.● Add water little by little for that perfect consistency.● Add turmeric powder and mix well. Add some more butter and mix well.● Add pav bhaji masala in two parts, half while cooking and half when the bhaji is cooked.● Add the cooked and mashed vegetables and mix well.● Add butter and salt, mix well.● Add some more water and cook for 5-6 minutes.● Finish with lime juice & chopped fresh coriander leaves.For Pav● Heat a tbsp of butter and add little red chili powder on a tawa.● Dab 2 pavs at a time and toast them as desired. Repeat till all the pavs are toasted.For Serving● Portion out bhaji on plate and put a dollop of butter on top. Place onion and lemon on side.● Garnish with fresh coriander and serve along with pav.NOTEYou can cook potatoes along with the other vegetables to instead of cooking separately.You can reduce the quantity of butter as per your preference.
