Mumbai style Sandwich, loaded with spicy chutney and veggies, is extra filling and super duper delicious too!MUMBAI TOAST SANDWICHIngredients8 white bread slices1 tablespoon oil1 tablespoon ginger-garlic-green chilli paste¼ teaspoon turmeric powder3 medium potatoes, boiled, peeled and mashed Salt to tasteButter as requiredGreen chutney as required½ small cabbage, shredded1 medium green capsicum, cut into stripsChaat masala for sprinkling1 large tomato, cut into roundels1 large onions, cut into roundelsMethod1. To prepare potato bhaji, heat oil in a non-stick pan. Add ginger-garlic-green chilli paste and sauté for 30 seconds. Add turmeric powder and sauté for 30 seconds.2. Add potatoes and mix. Add salt, coriander leaves and sprinkle some water on top, mix and cook for 1-2 minutes, mashing lightly. Transfer in a bowl.3. To prepare one sandwich, apply some butter and green chutney on one side of two bread slices. 4. Put some cabbage, capsicum strips and sprinkle some chaat masala on the chutney side of one bread slice. Put some potato bhaji, onion roundels, 1 tomato roundel, sprinkle some chaat masala on top of capsicum strips and cover with another bread slice with chutney side downwards. 5. Grease a non-stick sandwich toaster with some butter, place the sandwich, cover and place on heat and toast from both sides on medium heat, flipping occasionally. Remove from the toaster and apply some butter on top.6.
