Murg Yakhni Kashmiri Style Chicken Yakhni Chef Harpal Singh

Ingredient Quantity
Chicken on bone 250 gm.
Ghee 3-4 tbsp
Bay leaf 1 no.
Black pepper 1tsp
Cloves 6-8 no.
Cinnamon stick inch
Green cardamom 4-5 no.
Black cardamom 2 no.
Cumin seeds 1 tsp
Salt to taste
Yogurt 1 cup
Brown onion paste 2 no.
Ginger powder 1 tsp
Fennel powder 1 tsp
Asafoetida tsp
Water 5 cup
Brown onion for garnish
Coriander chopped for garnish

Method:
1. Heat a 2-3 tbsp of ghee in a pan, add bay leaf, black pepper, 4-5 cloves, cinnamon stick, green cardamom, black cardamom and cumin seeds, mix well and saut till seeds are splutter.
2. Add chicken, mix well and saut for 2 min.
3. Add water and mix well.
4. Add salt, yogurt and brown onion paste, mix well.
5. Add Ginger powder, fennel powder, mix well and cook for 35-40 min. stir in between.
6. Heat remaining ghee in another pan; add asafoetida and remaining cloves, saut for 30 sec.
7. Now add spoon full of gravy in to the tempering pan, mix well and pour this mixture to the gravy, mix well.
8. Remove Yakhni in serving bowl, garnish with brown onion and coriander chopped and serve hot.
