Murgh Musallam
Ingredients for Chicken Marination:
Yogurt 1 cup
Shan Ginger garlic paste 1 tbsp
Green chili paste 1 tbsp
Salt 1 ½ tsp
White pepper powder 1 tsp
Red chili powder 1 tsp
Coriander powder 1 tbsp
Cumin powder 1 tsp
Lemon juice 1 tbsp
Food color (optional) 1/4 tsp
Whole chicken
Oil (for frying) as required

Ingredients for Gravy:
Almonds 10-12
Cashew nuts 10-12
Fried onion 1/2 cup
Green chilies 2
Coriander 1/2 cup
Water as required
Oil 1/2 cup
Prepared paste
Leftover marinade
Yogurt 1 cup
Salt 1/2 tsp
Red chili powder 1/2 tsp
Garam masala powder 1/2 tsp
Water 1/2 cup (if needed)
Fried chicken
Butter 1/4 cup
Plain rice as required
Garnish as required

Directions for Chicken Preparation:
1. In a bowl add yogurt, ginger garlic paste, green chili paste, salt, white pepper, red chili powder, coriander powder, cumin powder, lemon juice, food color.
2. Pour this marinade over the chicken, spread evenly and marinate for 4 hours.
3. Shallow fry from each side for 5 minutes over medium heat. Take it out of oil and set aside.
Directions for Gravy Preparation:
4. In a blender add almonds, cashew nuts, fried onion, green chilies, coriander, water and blend well into smooth paste.
5. In a pot heat oil and add prepared paste, leftover marinade and cook for 2 minutes.
6. Add yogurt, salt, red chili powder, garam masala powder and cook until oil has separated. Add water and mix well.
7. Add fried chicken and simmer over low heat for 7-10 minutes.
8. Lastly add butter and serve over plain rice and garnish.
