MURGH ZAFRANI DO PYAZA

Ingredients

750 grams chicken, cut into 2 inch pieces
A large pinch of saffron
2 medium onions, sliced
1 large onion, quartered
1 tbsp poppy seeds
1 tbsp chironji
20-25 almonds
3 tbsps oil
1 tbsp garlic paste
1 tbsp ginger paste
2 tsps red chilli powder
½ tsp turmeric powder
½ tsp garam masala powder
Salt to taste
½ cup yogurt
1½ cups chicken stock
Freshly chopped coriander for garnish
Onion rings to serve
Lemon wedge to serve
Paranthe to serve

Method

1. In a blender jar, add poppy seeds, chironji, almonds and blend to a fine powder. Set aside.
2. Heat oil in a non-stick deep pan, add onion and sauté till golden brown. Add garlic paste, ginger paste and sauté well. Cook for 1 minute.
3. Add chicken and mix well. Cook for 2-3 minutes on high heat. Add red chilli powder, turmeric powder, garam masala powder and add the prepared ground powder.
4. Add salt and quartered onion, mix well and add saffron, yogurt and sauté on high heat for 3-4 minutes.
5. Add stock and mix well. Cover and cook till the chicken is cooked completely.
6. Garnish with chopped coriander. Serve hot with onion rings, lemon wedge and paranthe.
