A super comforting bowl of soup made with mushrooms and coriander is just what you need after a tiresome day.Terms & Conditions for Contest -http://tiny.cc/8gcrazMUSHROOM DHANIA SHORBAIngredients10-12 button mushrooms, thinly sliced12-15 fresh coriander stalks, washed and roughly chopped2 tbsps chopped fresh coriander leaves2 tsps Tata Sampann Coriander powder½ tsp oil1 large onion, finely choppedSalt to taste2 tsps finely chopped ginger2 tsps finely chopped garlicCrushed black peppercorns to taste4 tsps lemon juiceFresh coriander sprig for garnishCroutons to serveMethod1. Heat oil in a non-stick deep pan, add onion and mix well. Add a pinch of salt and mix till translucent. Add ginger and garlic and sauté for 1 minute.2. Add mushrooms and sauté well. Add salt and mix, cook for 2 minutes. Add coriander stalks and sauté for a few seconds.3. Add 1¾ cups water and mix well. Add crushed black peppercorns and 1 tbsp chopped fresh coriander leaves. 4. Add Tata Sampann Coriander Powder and mix well. Cover and cook for 10-15 minutes.5. Switch the heat off and blend the mixture using an electric hand blender till blended well.6. Place the pan back on heat, add 1 cup water and mix, cook till the mixture comes to a boil. Cook for 5 minutes. 7. Switch the heat off and add lemon juice, mix well and transfer into a serving bowl.
