MUSHROOM DO PYAZAIngredients1 cup button mushrooms, quartered1 medium onion, peeled and chopped1 medium onion, peeled, cut into cubes and layers separated2 tbsps oil1 green chilli, slit + for garnish1 tsp ginger paste1 medium tomato, chopped½ cup fresh tomato puree¼ tsp turmeric powder½ tsp red chilli powder½ tsp garam masala powderSalt to taste1 medium green capsicum, seeded and cut into 1 inch cubes1 tbsp fresh cream1 tbsp chopped fresh corianderFresh coriander sprig for garnishLaccha paranthe to serveMethod1. Heat oil in a non-stick pan, add green chilli, green chilli, ginger paste and mix well. Add chopped onion and sauté till it turns golden brown.2. Add tomato, mix and cook till pulpy. Add tomato puree and sauté for a minute. Add turmeric powder, red chilli powder, garam masala powder and salt and sauté for a minute.3. Add ½ cup water and mix well. Cover and cook for 4-5 minutes. Add diced onion, capsicum and mushrooms and mix well. Cover and cook for 4-5 minutes.4. Add fresh cream and chopped coriander and mix well. Cook for a few seconds and take the pan off the heat.5. Transfer into a serving bowl and garnish with coriander sprig and slit green chilli.
