Flavourful Rissotto made with Quinoa, Brown Rice and MushroomsMUSHROOM QUINOA RISOTTOIngredients ½ cup quartered button mushrooms ¼ cup quinoa, soaked in water2 tbsps brown rice, soaked in water1 medium onion1 tsp olive oil1tbsp butter1 tsp finely chopped garlic ½ cup white wine2-3 cups vegetable stock Salt to tasteCrushed peppercorns to taste¼ cup grated processed cheese 2 tbsps fresh creamMethod 1. Finely chop onion. 2. Heat olive oil in a deep non-stick pan. Add butter, chopped onion and sauté till translucent. Add garlic and sauté further for half a minute. Add white wine and mix well. Add button mushrooms and soaked quinoa and mix well. 3. Add brown rice, 2 cups water and mix well. Cook for 5-7 minutes. Add vegetable stock, salt, crushed peppercorns and cook till the rice is done. 4. Add grated cheese and mix well. Add fresh cream and mix well. Cook till the water reduces to half. 5.
