Goes perfect with steamed rice.MUTTON KADHIIngredients500 grams boneless mutton, cut into 1 inch pieces 1 cup gram flour (besan)1 cup yogurt1 tablespoon garlic-green chilli paste1 teaspoon ginger-green chilli pasteSalt to taste2 tablespoons oil1 teaspoon black peppercorns6-8 cloves1 teaspoon finely chopped ginger1-2 green chillies, finely chopped2 medium onions, sliced¼ teaspoon asafoetida (hing)1 medium tomato, finely chopped¼ teaspoon turmeric powder1 teaspoon red chilli powder1 teaspoon coriander powder½ teaspoon garam masala powderA pinch green cardamom powder1 teaspoon finely chopped fresh coriander leavesFresh coriander sprig for garnishing Method1. Put mutton pieces in a bowl. Add garlic-green chilli paste and salt, mix well and set aside to marinate. 2. Mix together gram flour, yogurt, ginger-green chilli paste and salt with sufficient water to a thin mixture. 3. Heat oil in a non-stick pan. Add peppercorns, cloves, ginger, green chillies and onions and mix well. 4. Add salt and asafoetida, mix well and sauté till onions turn golden brown. Add tomato, mix and cook till it turns soft and pulpy. 5. Add turmeric powder, chilli powder, coriander powder and garam masala powder, mix well and cook for a minute. 6. Add marinated mutton pieces and mix. Add sufficient water and salt, mix well, cover and cook till mutton is tender. 7. Add gram flour-yogurt mixture and stir to mix. Add cardamom powder and coriander leaves, mix well and bring to a boil. 8. Garnish with coriander sprig and serve hot.
