Mutton Masala All Time Favourite Sanjeev Kapoor Khazana

Strong flavours se bharpur aapke homemade mutton masala ka aroma sabhi ka dil khush kar dega, fir recipe mein use karenge toh aur bhi maza aaega.

MUTTON MASALA

Ingredients

750 grams mutton, cut into 2 inch pieces on the bone
cup yogurt
tsp turmeric powder
Salt to taste
2 tbsps red chilli paste
lemon
cup ghee
1 tsp cumin seeds
3-4 green cardamoms
1 black cardamom
2 inch cinnamon stick
2 bay leaves
5-6 cloves
6-8 black peppercorns
2 large onions, finely chopped
1 tbsp ginger-garlic paste
2 large tomatoes, finely chopped
2 tsps red chilli powder
2 tsps coriander powder
1 tsp cumin powder
tsp turmeric powder
2-3 green chillies, slit + for garnish
2 tbsps chopped fresh coriander leaves
tsp garam masala powder
Ginger strips for garnish
Fresh coriander sprigs for garnish
Phulkas to serve
Onion slices to serve
Fresh mint leaves to serve
Lemon wedges to serve

Method

1. Take mutton in a large bowl, add yogurt, turmeric powder, salt, red chilli paste, and squeeze the juice of lemon and mix well. Marinate for 35-40 minutes.
2. Heat ghee in a handi. Add cumin seeds, green cardamoms, black cardamom, cinnamon stick, bay leaves, cloves, and black peppercorns, and saut till fragrant. Add onions and saut till golden brown.
3. Add ginger-garlic paste, mix and cook for 1-2 minutes.
4. Add the mutton and saut on high heat for 3-4 minutes. Add tomatoes, mix and cook till soft and pulpy.
5. Reduce the heat to low, add red chilli powder, coriander powder, cumin powder, turmeric powder, and mix well.
6. Add salt, mix and cook for 2-3 minutes. Add 2 cups water, mix, cover with a lid and cook for 45-50 minutes.
7. Remove the lid, and continue to cook for 10-15 minutes or till the mixture thickens.
8. Add green chillies, coriander leaves, and garam masala powder and mix well. Transfer into a serving bowl, garnish with ginger strips, green chillies, and coriander sprigs.
9. Serve hot with phulkas, onion slices, mint leaves, and lemon wedges.
