To make the seekh kebab, add the mutton mince in a blender along with onion, ginger-garlic paste, coriander, green chillies, fresh cream and papaya paste to make a smooth mince mixture. 2. Remove this into a bowl and mix it well to make it a little smooth. Add chilli powder, roasted cumin powder, garam masala powder and brown onion paste, mix well using finger tips. 3. If the mince batter does not bind, add fresh bread crumbs and mix well. 4. Once the mince mixture is ready, take the edible sugarcane sticks and start shaping the mince in cylinders around the stick. Keep aside to chill and set for some-time. 5. Heat a non-stick grill pan and add some oil, place the seekh kebabs on the pan and grill from all sides, keep turning them till they get a nice color and perfect grill marks. 6. The mutton in the kebabs will cook fast comparatively as it has been minced well. 7. Serve with green chutney, sprinkled with chaat masala on top and lemon wedges along with onions on side.
