Mutton Tehri or Mutton biryani/pilaf (Mutton with fragrant rice) | Ananya Banerjee

Call it mutton tehri or tahari or tehari, these are all mixed version of mutton biryani or pulao/pilaf or mutton with fragrant rice and is a popular Bangladeshi recipe. It is a very traditional and age old recipe.

This is not only a famous Bangladeshi recipe but it is also very popular all over the world. It can also be made using vegetables like veg tahari.
Mutton Tehri recipe I am sharing here is a recipe of fragrant rice mixed with mutton or meat and cooked in aromatic and flavorful spices.

Ingredients:
For the rice
1 cup tulaipanji rice
Cardamon - 2 pieces
Cinnamon - 2 sticks
For the marination
500 gms mutton boiled keep the stock intact. cut in 1 inch pieces
1 tbs Garlic paste Ginger paste
1 tsp Garam masala
1 tsp Coriander powder
1 tbs Poppy seeds paste Plain yogurt - 1/2 cup
1 tsp Red Chili Powder
½ tsp Black pepper powder
1 tsp Lemon juice
Onion brista
1 tsp Nutmeg-mace powder
1/2 cup Milk
1 tsp Sugar
1/4 cup Mustard oil and Ghee
Green Chilies - 7-8 pieces

Method:
Heat mustard oil. Add ginger paste-garlic paste and saute well.
Add boiled meat, beaten yoghurt, chilli powder, salt, lemon juice, garam masala, pepper, coriander powder, poppy seeds paste, coriander powder, cumin powder, red chilli powder, nutmeg and mace powder and stir fry. Add garam masala powder.
Add the rice and cook on high heat. Add the milk and the reserved stock. Cook and covered till the rice is cooked.
