Naomi Nachmans Mock Sesame Noodles (KFP) OR Just Plain GF

From Naomis essential Passover cookbook, Perfect For Peach by Artscroll , comes this nourishing and simple dish. You gotta try it for chol hamoed dinner or erev Pesach lunch, or a gluten free meal during the year

Ingredients:
1 large spaghetti squash
2 Tbsp. almond butter
4 tsp. Heaven & Earth Coconut Aminos
1 Tbsp. honey
1 Tbsp. brown sugar
2 Tbsp. lemon/lime juice
2 cloves garlic, crushed
2 tsp. red wine
1 Tbsp. chicken broth or water
1/4 cup oil
1 tsp. salt
Optional toppings: Shredded carrots, Sliced scallions, Slivered almonds

Directions:
1. In a small pot, combine all sauce ingredients. Cook over medium heat, whisking frequently until smooth and combined (about 5 minutes).
2. Add cooked spaghetti squash strands and stir until all squash is coated.
3. Garnish with toppings of your choice. Serve hot.
