NASI GORENGIngredients8 chicken supremesMarinadeSalt to taste½ tbsp lemon juice1 tsp soy sauce½ tsp red chilli powderPeanut sauce2 tsps oil1 tbsp chopped garlic1 small onion, chopped¼ cup crushed roasted peanuts2 tbsps tomato puree2 tsps soy sauceSalt to taste½ tsp red chilli powder1 tsp honey½ tsp lemon juiceSichuan rice3 cups cooked rice2 tsps oil3 spring onions, chopped1½ tbsps Sichuan sauceSalt to tasteFried egg1 egg1 tsp oilSalt to tasteCrushed black pepper to tasteMethod1. In a bowl, add the chicken pieces, salt, lemon juice, soy sauce, red chilli powder, mix well. Set aside to marinate for 10-15 minutes.2. Heat oil in a non-stick pan, add garlic, onion, and cook till translucent. Add peanuts and tomato puree, soy sauce, salt and mix well. Add ¼ cup water. Cook for 2-3 minutes.3. Add red chilli powder, lemon juice and honey, mix well. Set aside.4. Heat oil in a non-stick pan add the marinated chicken pieces and cook till done. Set aside.5. Heat oil in a non-stick wok, add the spring onion bulbs, sauté till translucent. Add Sichuan sauce, cook for 1-2 minutes.6. Add the cooked rice, mix well. Add salt to taste and spring onion greens, mix well and set aside.7. Heat oil in a small non-stick pan, break the egg in it, sprinkle salt and crushed black peppercorns. Cook each side for a minute and set aside.8.
