Start the day on a healthy note with oatmeal and eggsOATMEAL WITH EGGSIngredients2 cups rolled oats4 eggs1 tsp olive oil1 tsp butter½ cup chopped onions2 cups buttermilkSalt to tasteCrushed black peppercorns to taste½ green capsicum½ cup chopped tomatoes50 gms processed cheeseA few sprigs of fresh parsleyMethod1. Heat olive oil and butter in a non-stick pan. Add onions and saute for 1 minute. Add oats and mix. Add buttermilk and mix and cook.2. Add salt and crushed peppercorns and mix.3. Chop green capsicum finely and put into a bowl. Add chopped tomatoes and mix well.4. Put oats into 4 ramekin moulds. Break an egg into each mould. Sprinkle a little salt and crushed peppercorns.5. Place tomato-capsicum on other side of the yolks. Grate a little cheese and put over the vegetables.6. Cook in the microwave for ½ minute. Check if it is done.
