Egg Omelette topped with pizza sauce and your favourite fresh vegetable toppings and loads of cheese.OMELETTE PIZZAIngredients12 eggsSalt to tasteCrushed black peppercorns to taste4 tablespoon oil2 tablespoons finely chopped garlic8 tablespoons finely chopped spring onion bulbs4 tablespoon finely chopped three coloured capsicums4 tablespoon pizza sauce4 tablespoon mixed capsicum strips2-3 green olives, sliced4-5 black olives, sliced20-24 fresh basil leaves4 tablespoons sliced spring onion greens8 tablespoons grated mozzarella cheeseMixed dried herbs for sprinkling Red chilli flakes for sprinkling Method1. For each pizza, whisk together 3 eggs, salt and crushed peppercorns in a bowl. 2. Heat 1 tablespoon oil in a non-stick pan. Add ½ tablespoon garlic and 2 tablespoons spring onion bulbs, mix and sauté well. Add 1 tablespoon chopped capsicums and mix. 3. Pour egg mixture into the pan, spread, cover and cook for 1 minute. Spread 1 tablespoon pizza sauce and top with 1 tablespoon capsicum strips, 5-6 green olive slices and 8-10 black olives, 1 tablespoon spring onion greens and 2 tablespoons cheese, cover and cook till cheese melts. 4. Cut into wedges, sprinkle mixed herbs and chilli flakes and serve hot with tomato ketchup.
