Onion Uttapam is the perfect breakfast dish to start the day.ONION UTTAPAM Ingredients 2¾ cups parboiled rice, washed and soaked with 6 cups water for at least 4 hours ¼ cup rice, washed and soaked with 6 cups water for at least 4 hours 1 cup split skinless black gram, washed and soaked in 3 cups water for at least 4 hours 1 tsp fenugreek seeds (optional) Salt to taste1½ tsps ghee1 small onion sliced1 small green chilli chopped1 small carrot shreddedFreshly chopped coriander as requiredSambhar to serve Coconut chutney to serve Method1. Drain and blend the two rice varieties into a smooth batter by adding sufficient water. Drain and blend the split gram into a smooth batter by adding sufficient water.2. Transfer both the batters together in a bowl. Add salt and mix both the batters and set aside to ferment in a warm place for 4-6 hours or overnight.3. Heat 1 tsp ghee on a non-stick tawa, pour a ladleful of batter, sprinkle onion slices, green chilli, carrots and coriander, drizzle ghee and cook for 2-3 minutes on medium heat. Turnover and cook on other side till done.4.
