Isn’t it comforting?OPEN MASALA EGGIngredients 4 eggs 1 tablespoon olive oil 2 green chillies, finely chopped1 tablespoon finely chopped garlic1 tablespoon grated ginger2 medium onions, sliced1 large tomato, finely chopped1 fresh jalapeno, sliced 8-10 button mushrooms sliced1 cup shredded spinach Salt to taste Crushed black peppercorns to taste1 tablespoon Schezwan chutney1 teaspoon chopped fresh coriander leaves Brown bread slices for serving Method1. Heat olive oil in a non-stick pan. Add green chillies, garlic, ginger and onions and sauté till onions are translucent. 2. Add tomato and jalapeno, mix and cook till the tomatoes turn soft and pulpy. Add mushrooms, mix and cook for 1-2 minutes.3. Add spinach, mix and cook till the leaves wilt. Add salt and crushed peppercorns, mix and cook for 2-3 minutes. 4. Add Schezwan chutney and mix well. Break in eggs, sprinkle crushed peppercorns, salt and coriander leaves, cover and cook till the eggs are fully done. 5.
