A genius recipe that uses risotto as a dessert, this recipe brings together one of the most unique flavors in one which work together amazingly well.ORANGE CARAMEL RISOTTOIngredients½ cup Arborio rice2 cups orange juice¼ cup sugar3 tbsps butter1 cup fresh creamFresh orange segments, as requiredMethod1. Cook ¼ cup sugar with 2 tbsps water in a non-stick pan till it caramelizes.2. Heat 2 tbsps butter in another non-stick pan, add Arborio rice and saute for 1 minute. Add 1½ cups orange juice and cook. 3. When the juice is almost absorbed, add another ½ cup orange juice and cook.4. When sugar caramelizes, add fresh cream and mix well. Add 1 tbsp butter and mix well.5. When the rice is just done, add 2 tbsps water and mix. Add the caramel sauce and mix well and cook for 2-3 minutes more.6. Cool slightly and pour into shot glasses.
