Orange Caramel Risotto | Cooksmart | Sanjeev Kapoor Khazana

A genius recipe that uses risotto as a dessert, this recipe brings together one of the most unique flavors in one which work together amazingly well.

ORANGE CARAMEL RISOTTO

Ingredients

½ cup Arborio rice
2 cups orange juice
¼ cup sugar
3 tbsps butter
1 cup fresh cream
Fresh orange segments, as required

Method

1. Cook ¼ cup sugar with 2 tbsps water in a non-stick pan till it caramelizes.
2. Heat 2 tbsps butter in another non-stick pan, add Arborio rice and saute for 1 minute. Add 1½ cups orange juice and cook.
3. When the juice is almost absorbed, add another ½ cup orange juice and cook.
4. When sugar caramelizes, add fresh cream and mix well. Add 1 tbsp butter and mix well.
5. When the rice is just done, add 2 tbsps water and mix. Add the caramel sauce and mix well and cook for 2-3 minutes more.
6. Cool slightly and pour into shot glasses. Place an orange segment on top and serve.
