Enjoy making this flavourful Spanish delicacy in your kitchen today.PAELLAIngredients300 grams chicken on bone with skin, cut into 2 inch pieces8-10 clams7-8 big prawns, peeled and deveined with tail intact200 gms rawas fish, cut into 1 inch cubes4 chicken sausages1 cup Arborio rice2 tsps red paprika powder1 tsp dried oreganoCrushed black peppercorns to tasteSea salt to taste2 tbsps oil2 medium white onions, sliced1 tbsp chopped garlic½ cup tomato pureeFew strands of saffron2 cups fish stock2 sprigs of oregano¼ cup boiled green peas1 tbsp lemon juiceFlat parsley for garnishMethod1. Marinate the chicken with red paprika powder, dried oregano, crushed black pepper, and sea salt.2. Heat 1 tbsp oil in a paella pan, add the chicken. Sear on high heat till golden brown from both sides. Take it off the heat and set aside. 3. Heat remaining oil in the same pan, add onions and sauté till golden brown. Add garlic, tomato puree and mix well. Add Arborio rice and mix well.4. Add 1 cup fish stock. Mix well. Sauté on medium heat for 10-12 minutes.5. Add sea salt,saffron, crushed black pepper, chicken, remaining fish stock and mix well. Cook for 5-6 minutes6. Add clams, diagonally slice chicken sausages into 4 pieces and add in the pan. Mix well. Cook for 10 -12 minutes on medium heat.7. Add prawns, rawas fish, and fresh oregano. Add some water and cook for 5-7 minutes.8. Add green peas and lemon juice. Mix well and cook for 2-3 minutes.9.
