Palak Puri | Sanjeev Kapoor Khazana

Palak Puri is made by mixing wheat flour with pureed spinach and other spices. It is best enjoyed hot with mango chutney or chilli pickle.

PALAK PURI

Ingredients

2 cups whole wheat flour (atta)
½ cup spinach (palak) puree
Salt to taste
½ teaspoon carom seeds (ajwain)
1 tablespoon oil + for greasing and deep-frying

Method

1. Mix together spinach puree, salt, carom seeds, wheat flour and 1 tablespoon oil in a bowl. Add sufficient water and knead into a semi-stiff dough. Set aside for 5-10 minutes.
2. Divide the dough into equal portions, grease with some oil and roll out into small discs or puris.
3. Heat sufficient oil in a kadai. Deep-fry puris till golden brown and puffed up. Drain on absorbent paper.
4. Serve hot.
