Palak Rice

1/2 cup spinach (palak) pure
3 cups cooked rice (chawal)
1 1/2 tbsp oil
1 tsp cumin seeds (jeera)
1/2 cup finely chopped onions
2 tbsp finely chopped garlic (lehsun)
1/2 cup finely chopped tomatoes
2 tsp green-chilli paste
salt to taste

Method

Heat the oil in a broad non-stick pan, add the cumin seeds, onions and saut on a medium flame for 1 to 2 minutes.

Add the garlic and saut on a medium flame for 1 to 2 minutes.

Add the tomatoes and saut on a medium flame for another 2 minutes. Add the green-chilli paste, spinach pure, mix well and cook on a medium flame for 2 to 3 minutes, while stirring continuously.

Add the rice and salt, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.

Serve hot.
