• 12 oz. spinach washed and remove the stems this should be about 8 cups of packed spinach
• 1 tablespoon ghee or clarified butter
• 1/2 teaspoon fenugreek seeds (mathi seeds)
• 1/2 teaspoon turmeric (haldi)
• 1 tablespoons chopped ginger (adrak)
• 2 tablespoons chopped green chili I prefer serrano chili
• 1 teaspoon salt
• 2 tablespoons besan (gram flour)
• 1/2 cup chopped tomato in small pieces
• 4 cups whole milk
For Seasoning
• 2 tablespoons ghee or clarified butter
• 1/2 teaspoon cumin seeds (jeera)
• 1/2 teaspoon red chili powder
