PANCHMEL DAL - (Serves - 4)Ingredients¼ cup split black gram (dhuli urad dal), soaked for 2 hours ¼ cup split Bengal gram (chana dal), soaked for 2 hours ¼ cup split pigeon peas (toor dal), soaked for 2 hours ¼ cup whole red lentil (sabut masoor dal), soaked for 2 hours¼ cup whole green gram (sabut moong dal), soaked for 2 hoursSalt to taste½ teaspoon turmeric powder3 tablespoons gheeA pinch of asafoetida (hing)4-5 cloves2 dried red chillies½ teaspoon cumin seeds (jeera)1 teaspoon green chilli-ginger paste1 teaspoon coriander powder1 teaspoon roasted cumin powder½ teaspoon red chilli powder2 medium tomatoes, finely chopped1 teaspoon garam masala powderFresh coriander leaves for garnishingMethod1. Pressure cook drained black gram, Bengal gram, pigeon peas, red lentils and green gram in 3 cups water with salt and turmeric powder till the pressure is released 2-3 times. 2. Heat ghee in a deep non-stick pan. Add asafoetida, cloves, broken red chillies and cumin seeds and sauté till cumin seeds change colour.3. Add green chilli-ginger paste and sauté for 1 minute. Add coriander powder, cumin powder and chilli powder and sauté for 30 seconds. 4. Add tomatoes, mix and cook till ghee separates. Add cooked dal, some water and salt, mix and cook on medium heat till mixture boils. Reduce heat and cook for 3-5 minutes.5. Add garam masala powder, mix and cook for 1-2 minutes. 6.
