Spicy paneer bhurji mixture stuffed in these deep fried cigars makes this quick starter a super hit.PANEER BHURJI CIGARIngredients¾ cup grated cottage cheese (paneer)8-12 spring roll sheets1-2 tablespoons oil1 teaspoon cumin seeds (jeera)1-2 green chillies, finely chopped1 medium green capsicum, finely chopped1 medium yellow capsicum, finely chopped1 medium tomato, finely chopped½ teaspoon red chilli powder½ teaspoon garam masala powderSalt to taste1 tablespoon chopped fresh coriander leaves Refined flour (maida) slurry for applyingOil for deep-fryingFresh coriander sprigs for garnishingMethod 1. Heat oil in a non-stick pan. Add cumin seeds, and once they begin to change colour, add green chillies and sauté for a few seconds. 2. Add green capsicum and yellow capsicum and sauté for 30 seconds. Add tomatoes, mix and cook till the tomatoes turn soft and pulpy. 3. Add chilli powder, garam masala powder, salt and cottage cheese, mix well and cook for 1-2 minutes. 4. Remove from heat, add coriander leaves and set aside to cool to room temperature. 5. Place the spring rolls sheets on the worktop. Put a spoonful of cottage cheese mixture in the centre and roll tightly into cigars, sealing with slurry. Cut the edges. 6. Heat sufficient oil in a kadai. Deep-fry the cigars till golden brown and crisp. Drain on absorbent paper. 7. Garnish with coriander sprigs and serve immediately with tomato ketchup.
